JR's Heavenly Fudge

Ingredients
2 sticks unsalted butter (not margarine)
3/4 cup evaporated milk
3 cups sugar
2 oz. unsweetened baking chocolate, broken into pieces
7 oz. jar marshmallow creme
12 oz. semi-sweet chocolate morsels
2 tsp vanilla

Instructions
1. Combine butter, evaporated milk and sugar in a large, heavy saucepan over medium heat.
2. Stir constantly until the mixture reaches a full, rolling boil.
3. Continue boiling, over medium heat and stirring constantly, for 5 minutes or until the mixture reaches 226-228° (very soft ball stage).
4. Remove from heat and add unsweetened chocolate, marshmallow creme and chocolate morsels and STIR LIKE CRAZY until combined.
5. Quickly stir in vanilla, then pour into a buttered 8X10 glass or pyrex casserole to cool.

Tips
For best results, use a candy thermometer and don't overcook. And for the very best results, after the mixture begins to boil, rinse your stirring spoon and wash down the sides of the pot with a clean dishcloth or paper towels soaked in water (the water evaporates once the mixture rises above 212°). Any grains of sugar left on the sides of the pot or stirring spoon will cause the sugar in the fudge to recrystalize while it cools, resulting in grainy fudge.
